When looking at used parts on a forum for sale section, what is a good secure way to pay people when shipping things? I always feel like paypal is just a sketchy way to handle anything with money but it seems like the easiest way. Does anyone else have a better payment method they use when cash exchange in person is not an option (item will be shipped).

Online escrow. It will add a few percents for fees but you have time to make sure the part is ok when you receive it before payment is sent to the seller.
Make sure to use a known escrow.

Paypal provides protection for their members using their service. If one person never received the items they paid for, Paypal can return the funds. If they item received isn't what was advertisted, Paypal can refund the purchaser. It's way less sketchy than money order or check.. I'd go with PayPal.

PayPal is great because they can help get your money back if something goes wrong.
My advice would be to pay attention to the person's past posts and how they interact with the forum, if they've sold anything before, or if they seem shady in any way.

Yeah, PayPal is really the only way that isn't sketchy. When I sold my Corvair, they were going to pay me with a wire transfer, but I hate doing that...I decided instead to just pay the small fee and have him pay with PayPal. Couldn't have gone any better...I'll buy from literally any website that lets me use PayPal since I know I'm protected.
But if anybody tells you to send money as a gift, tell them to fuck off. They don't pay any fees, and you're totally unprotected since you're gaming the system. I always ask for a detailed invoice, any good seller will know how to do that for you.

I suggest US Postal Service Money Orders.
If you send me a fake USPS Money Order for some parts, that's mail fraud and the US government takes that seriously.
If you send me a real USPS Money Order (via US Mail if you want to double up) and I cash it and then stiff you on the parts, that's mail fraud and the US government takes that seriously.
So basically, if you use USPS Money Orders as your payment method, BOTH parties have a strong incentive to play by the rules. I've sold a car to a guy in Hawaii this way. It worked great.

Paypal is great if you're buying, it can be pretty harsh on sellers though.
I know a few people who run stores and have had to wait months to sort out people who've claimed refunds without shipping back what they bought. Paypal will immediately freeze the funds and almost always sides with the buyer.
Always take photos and keep track of all shipping documents.

There IS a time limit though. If you wait too long, you won't get your money or item back.

Paypal was great to me when I got burned. I bought some $500 parts off of an f-body forum that were advertised as unused and in great shape. When I got them, however, there were stress fractures all over. The seller denied everything and wasn't cooperative; Paypal stepped in and got all my money back.
